Are you tired and sick of eating heavy starchy lunch meals that makes you feel bloated and comatose? Well, I have a healthy lunch alternative for you. For your next lunch meal, try this recipe – arugula salad topped with grilled shrimp and fresh fruit. This recipe is so refreshing and energizing. Alright then, let’s get cooking.

Ingredients needed:

  • 2 cups of pre-washed arugula
  • ½ cup of pre-washed shrimp (without shells)
  • ½ cup diced mango
  • ½ diced watermelon
  • 2 tablespoon of tofu
  • 1 tablespoon of honey roasted almonds
  • ½ teaspoon of flax seeds
  • ½ teaspoon of rosemary
  • ½ of an orange (squeezed)
  • 1 teaspoon of honey
  • 1 tablespoon of freshly squeezed lemon
  • 1 tablespoon of white wine (Any white should be fine)
  • ½ teaspoon of fresh cracked black pepper
  • Olive oil

Instructions:

Arugula
For a crisp arugula, soak in cold water for 5 minutes. This technique would help revive it. Strain out water completely and then place in a large bowl

Shrimp
Using a mixing bowl, add shrimp, sprinkle a pinch of salt, fresh cracked black pepper and rosemary. Mix up ingredients. Using medium heat, add 2 tablespoon of olive oil in a saucepan. Add in shrimp into saucepan and sauté for 4 minutes, turning it occasionally. Please, do not overcook the shrimp….one of my pet peeve is over-cooked shrimp…can’t stand it. Once the shrimp is cooked, transfer it into a bowl, cover bowl with plastic and set aside.

Salad dressing
For our salad dressing, whisk up orange juice, lemon juice, honey, white wine and pinch of black pepper on a mixing bowl. Ensure that all ingredients are completely mixed up.
In the large bowl with arugula, sprinkle salad dressing onto the arugula and mix everything up gently. Strain out excess dressing.

Transfer arugula in a salad plate. Arrange shrimp on the edges of the plate and then top with sweet and juicy mango cubes and watermelon and then sprinkle with honey roasted almonds, flax seeds and crumbled tofu.

Now take a bite of this scrumptiousness and enjoy with a chilled glass of white wine. You need to make this salad now. Very healthy, fresh and delicious.
