baked veggie egg muffins

Breakfast is a very important meal of the day because it fuels our bodies (both mentally and physically) and prepares us for a busy day ahead. Skipping breakfast is not an option especially for those who skip this meal as a means of controlling their weight. Studies have shown that skipping meals can actually make weight control more difficult. Therefore, the focus should be on the quality of our meals.

Always start your day with a nutrients-packed meal like these tasty egg muffins (Made with egg whites). Delicious and very easy to make.

Ingredients needed for egg muffins (Serving for 2 people):

  • 4-6 organic eggs
  • 1/4 of red onion (Chopped)
  • 2 tablespoons of chopped red bell peppers
  • 2 tablespoons of chopped scallion (1 stalk)
  • 1/2 teaspoon of chopped dill
  • pinch of salt and black pepper taste
  • olive oil
  • coconut cooking oil spray

Equipment Needed:

  • Mixing bowl (Medium size)
  • Small sauce pan
  • Muffin baking pan

 Instructions:

  1. Pre-heat oven to 350 degrees.
  2. Using a medium size mixing bowl, break eggs and separate the egg whites from the yoke. (For this egg white muffin recipe, we only need the eggs whites. Feel free to store/refrigerate the yokes for future use).
  3. Using a small sauce pan and medium heat, add in 2 tablespoons of olive oil and sauté the red onions for 10 seconds (Add in a pinch of salt and fresh ground black pepper). Turn off heat and let it cool off.
  4. Add the following ingredients into the mixing bowl with the egg whites: sauteed red onions, red bell peppers, scallion, dill, 4 tablespoons of olive oil and a pinch of salt and fresh ground black pepper to taste.
  5. Gently whisk/mix all the ingredients together.
  6. Spray lightly the muffin baking pan with coconut oil cooking spray.
  7. Gently pour the egg white mixture into the muffin baking pan (Note: fill halfway and not to the brim)
  8. Bake for 20-30 minutes, remove from oven afterward and let the egg muffins rest for 2-3 minutes.
