Not too long ago, I hosted a rustic-themed dinner party for a few of my friends. Just to say the least, I came up with the most amazing food-course line up…..think about a 9-course delicious menu….all created from scratch (Yes, 9-course!). My guests raved about the food and they couldn’t even stop themselves from licking their fingers after each course. This made me smile! Great food, great company….we all had a blast. I couldn’t have asked for a better experience. I figured that it would be a great idea to share a piece of this dinner party experience with you by introducing you to the delicious dessert that I made and served my guests. For dessert I served a warm caramelized bosc pear (Infused with cinnamon and mint) over vanilla ice cream and topped with fresh pomegranate seeds.

The warmth of the caramelized bosc pears over gently melted ice cream with the crunch of the pomegranate seeds was just heavenly! This dessert is very simple to make and quite healthy. I created this recipe out of the blue….it was more like an ‘aha’ moment that I had while preparing for my nine course dinner menu. I really wanted to serve my guests a delicious, homemade and healthy dessert and this recipe scored big time.

Ingredients Needed (Serving for 4):

  • 1 bosc pear
  • 2 sticks of cinnamon
  • 4 mint leaves
  • 1 tablespoon of olive oil (Substitute for butter)
  • ½ of pomegranate


Pre-heat a medium-sized saucepan using low heat. Slice the bosc pear into six long pieces and place into the pre-heated sauce pan and and drizzle with a tablespoon of olive oil. Throw in cinnamon sticks and mint leaves.

Toss and turn the bosc pears occasionally for 30 minutes until each side is caramelized, golden brown and soft. No need to add sugar at all to this recipe because the bosch pear has natural sugars which helps with the caramelization process.

Serve the caramelized bosch pear with low-fat vanilla ice-cream or almond milk vanilla ice cream and garnish with pomegranate seeds. This recipe is ‘deliciousness’ on a whole new level.

The warm caramelized bosc pear and low-fat vanilla ice-cream literally melts in your mouth and the pomegranate balances this recipe and provides a nice crunch.
