I recently got back from an amazing women entrepreneurial networking event hosted by Tigress Ventures (A start-up company founded by a good friend of mine). By the time I got home, I was famished and exhausted with little or no strength to cook a meal. The easy way out was to order food, however, since I am very particular about knowing what goes into my food and how it is prepared, I quickly ruled that option out. Instead, I did a quick audit of the ingredients that I had in my refrigerator and figured out how I could combine them to make a delicious and healthy recipe.

Luckily, I found some great looking fresh fruits – Mangoes, papaya, blueberries and bananas. Then, I remembered that I had some chia seeds and goji berries (Super foods rich in nutrients) in my kitchen cupboard. Yippee! I was so delighted to combine these fresh ingredients with some vanilla-flavored almond milk to create a healthy and delicious meal. This is how my almond milk chia seed pudding topped with fresh fruit and berries recipe came to be. See below instructions on how to make this very simple and healthy recipe which requires only 15 minutes of your time. Now, imagine if I had ordered food, it would have taken no less than 30 mins or more to arrive and also, I don’t think it would have been as healthy as my chia seed pudding. On that note, let’s get started with this recipe.

Ingredients needed:

  • ½ cup of organic vanilla-flavored almond milk (unsweetened)
  • ⅓ chia seeds
  • 2 ripe bananas (sliced in round circles)
  • ½ cup of peeled and diced papaya
  • ½ cup of peeled and diced mango
  • ⅓ cup of fresh blueberries
  • a handful of dried goji berries

Kitchen appliances needed:

  • sharp fruit knife
  • fruit cutting board
  • small or medium size pyrex bowl


Pour the almond milk into a pyrex bowl and next, mix in the chia seeds. Let this sit for about 8-10 minutes in the refrigerator until the chia seeds absorbs all the almond milk and swells up/rises.

Toss in chilled banana slices, diced papaya and mango, fresh blueberries and then sprinkle with goji berries.

Voilà, this chia seed pudding recipe is ready to be consumed and enjoyed! How easy is that? Does’t get any better than that.

Also, notice that I deliberately didn’t add any sugar or sweetener to this chia seed pudding recipe? And that’s because most of the ingredients that went into creating this recipe already contain natural existing sugars which is much more easier to digest than artificial sugars/sweeteners.
