grilled avocado caprese salad

Couple of weeks ago while browsing through my Instagram feed, I saw a delicious picture of an avocado caprese salad recipe posted by food and wine magazine. Considering my love for avocados, I just had to try this recipe. The beauty about this recipe is that it is very simply to make, requires only a few ingredients and incredibly delicious.

avocado caprese salad

Ingredients for grilled avocado caprese salad (Serving for 2):

  • 1 medium ripe avocado
  • 6 grape tomatoes (Sliced into halves)
  • 1 tablespoon of crumbled feta cheese
  • 2 – 3 leaves of fresh basil
  • olive oil
  • balsamic vinaigrette
  • kosher salt
  • freshly cracked black pepper

Kitchen equipment/utensils needed:

  • grill pan
  • serrated knife

Using a serrated knife, start from the tip of the avocado, make a circular incision around the avocado …just as if you are trying to cut it into two equal halves.

Use your hands to open up the avocado (Note, the incision you made should make it easy to do). Once opened, stick the serrated knife into the avocado seed and twist it in any direction to remove seed. Note, no need to remove the skin of the avocado.

Rub the inside of the avocado with olive oil and a pinch of kosher salt and black pepper.

Fire up your grill pan using medium heat and grill avocado face-down for 8 – 10 mins.

Transfer avocado into a flat serving plate. Top with sliced grape tomatoes, feta cheese and fresh basil leaves. Drizzle with a little bit more olive oil and a splash of balsamic vinaigrette.

This is such a simple and delicious recipe to make and a good alternative to the traditional salad.
