grilled tomatoes & sardines

This recipe was born out of pure necessity. I recently return from a trip to the beautiful city of Seattle, Washington. Upon my return home, I was completely famished and beyond hungry. Considering that I was gone all weekend and returned late at night, I didn’t get a chance to go grocery shopping, hence, I came home to a nearly empty refrigerator. Next, I ransacked my refrigerator and found some fresh organic tomatoes, however, I needed something more than tomatoes to quench my hunger. So I continued searching and then I found some avocados, sardines and dill. Yes! I let out a happy squeal because I knew that I could create something sumptuous with few the ingredients that I had handy.

My thought was to grill the tomatoes with some olive oil, freshly cracked black pepper and dill. Then, top it off with some fresh avocados, sardines and dill. This is the story of how this recipe – grilled tomatoes topped with avocado, sardines and dill was born. This recipe makes for a great appetizer to kick off your next dinner party. On that note, let’s get cooking!

Ingredients Needed (Serving for 1-2): 

  • 2 large organic tomatoes  (Note, regular tomatoes works as well)
  • 1 avocado
  • 4 pieces of tuna fish
  • 1 tablespoon of chopped fresh dill
  • freshly cracked black pepper
  • pinch of salt to taste
  • olive oil


Wash your tomatoes and dry off.

Slice the tomatoes into thick chunky round pieces. (Note, slicing it this way prevents the grilled tomatoes from falling apart once cooked).

Sprinkle each side of the thick chunky tomatoes piece with a little bit of salt and freshly cracked black pepper.

Using medium heat and a little bit of olive oil, grill each side of the tomatoes for 2 minutes each in a pan.

Transfer the grilled tomatoes into flat plate, top it off with slices of fresh avocado, a piece of sardine, and then, a sprinkle of dill. Drizzle with some olive oil and sprinkle  more freshly cracked pepper.
