organic eggs with avocado

As a New Yorker, Saturday brunch is a big part of the New York culture and has been dubbed by some as ‘The Most Important Meal’ of the week. I love Saturday brunch because it is a great way for me to relax, ‘break bread’ and enjoy a delicious meal with my family and friends after a busy work week.

Whether it is ‘brunching‘ at my favorite restaurant or hosting friends at home, Saturday brunch is not complete without eggs on the menu. Recently, I came up with a simple egg recipe using a few ingredients that I had in my refrigerator and it turned out to be very delicious. Allow me to introduce to you toasted sun flower seed bread (Gluten Free), topped with organic mashed avocado, organic scrambled egg whites and grape tomatoes. Sink your teeth into this! So delicious!

Ingredients for organic scrambled eggs with avocado (Serving for 1):

  • 2 large organic eggs
  • 2 slices of sunflower seed bread (Gluten free)
  • 1 cup of organic grape tomatoes
  • 1 organic avocado
  • 1 stem of fresh rosemary
  • 4 tablespoons of olive oil
  • ½ teaspoon of freshly cracked black pepper
  • a pinch of salt

Instructions:

Thoroughly wash the organic grape tomatoes using cold water and dry off. Cut tomatoes into halves.

Since we only need the egg whites for this recipe, crack open each egg and separate the yolk from the egg whites using a bowl.

Using a cutting board, chop the rosemary into fine pieces.

Transfer the finely chopped rosemary into the bowl with egg whites. Gently whisk the ingredients together.

Using a frying pan and low-medium heat, sauté the cherry tomatoes with olive oil. Add in the freshly cracked black pepper and salt to taste.

Pour the egg whites into the frying. Simmer for about 3-4 minutes and then, scramble all the ingredients together.

Lightly toast the sunflower seed bread and place in a flat dinner/serving plate.

Cut the avocado in half, use the heel of a knife to remove the pit. Using a tablespoon, gently scoop out the flesh of the avocado and place it on each toasted sunflower seed bread. Use a fork to mash the avocado making sure that each bread is completely covered with avocado.

Place the scrambled egg whites with sautéed grape tomatoes on top of the sunflower seed bread and avocado.

Drizzle with olive oil and sprinkle with more freshly cracked black pepper.

Voilà! Brunch is served. Sink in your teeth into the deliciousness! Bon Appétit!
