poached egg & grilled tomatoes

Hello folks! If you are currently trying to decide what to make for brunch, fret no more because I have a scrumptious recipe for you. And guess what? It is very easy and quick to make. With no further due, allow me to introduce to you my cinnamon muffin sandwich stuffed with poached egg, sauteed tomatoes slices and crispy cilantro. This recipe can be described as ‘sweet’ meets ‘savory’ because once you sink your teeth into this sandwich, you will experience a burst of delicious flavors – sweetness from the cinnamon and creaminess oozing out from the poached egg. Poached Egg

Ingredients needed (For 2 servings):

  • 2 Cinnamon Muffins (Note, I used the Thomas Muffin for the picture above)
  • 2 Eggs
  • 2 large and round slices of tomatoes
  • 1 cup of fresh cilantro
  • Pinch of salt/pepper to taste
  • 3 tablespoon of olive oil
  • 1 tablespoon of vinegar

Instructions:

Poached eggs:

  • Fill medium sized pot half-way with water and then add in vinegar
  • Bring water to boil and then reduce heat to a simmer
  • Crack eggs individually and gently place them into simmering water
  • Poach eggs for 3-4 minutes. Remove from pot and place in cold water to stop cooking process

Sautéed tomatoes slices:

  • Season tomato slices with salt and pepper
  • Gently heat olive oil in a pan, sauté each side of the tomatoes for 30 seconds each

Serving:

  • On a slightly toasted cinnamon muffin, layer on the sauteed tomatoes, fresh cilantro and poached egg.
  • Sprinkle with freshly cracked black pepper (Optional)
